Gutti vankaya curry /Brinjal Masala curry  with Kaju Flavour :Brinjal curry is the very famous recipe to everyone.Brinjal has very health benefits .Try to eat weekly one ....



1/2 kg brinjals 

2 tbsps oil

1 onion

4 green chilies

3 tomatos and amount of ground nuts , daniyalu

2 tbsp gasagasalu/white poppy seeds

2 tbsp white sesame seeds , cumin seeds , curry leaves, ginger garlic paste, salt

1 tbsp cumin powder, red chilli powder, coriander powder.






Simple Method

1.Take the  pan and add  above ingredients, grind properly required amount of water.

2. Cut the brinjals with quarters and stuff the brinjals with the ground powder.

3. Heat pan and add oil, after heat the oil add curry leaves, cumin seeds, onions , tomatoes, turmeric,ginger garlic paste .Saute until the onions and tomatoes mushy.Add the stuffed brinjals and remaining stuffed powder.Add some amount of water.Reduce flame and adjust salt , it takes 5 to 10 minutes and curry thickens.Turn off heat.

4. Ready to eat gutti vankaya /masala vankaya curry with flavoured rice/chapati/roti.
